Dairy-free, Grain-free

Today, while walking through the market, my eye was caught by some vibrant organic asparagus and scrumptious cremini mushrooms.

Inuitively I knew they would taste amazing together. And there you have it… a dairy-free, grain-free perfected Asparagus Mushroom Soup was born (I say ‘perfected’ because the friend I served this for enthusiastically pronounced “Bravo!” after eating). It was a first!

I use bone broth as the base for all my soups, for one, because of its long list of health benefits, and two, because it tastes damn good. It adds such tremendous flavor and creaminess to soup—I’m pretty sure bone broth is the secret ingredient to any gourmet soup. Sorry my vegetarian friends—for you I would suggest adding a handful of raw cashews to the soup (while blending) to enhance the creamy factor. However you choose, enjoy– this soup is definitely a keeper.

Asparagus Cremini Soup

Ingredients
  1. 2 bunches asparagus, about 25 stalks total, cut into 1-inch spears
  2. 8-10 cremini mushrooms, chopped
  3. chicken bone broth, or veggie broth if vegetarian
  4. 2 TBS coconut oil
  5. 1 yellow onion, chopped
  6. 5 cloves garlic, chopped
  7. 1 tsp rosemary
  8. salt & pepper to taste
Instructions
  1. In a large pot, sautee onion in coconut oil until caramelized. Add garlic and cook for 2-3 minutes. Add asparagus and mushrooms, and cover with enough broth to cover veggies by 1-2 inches. * If you prefer a thinner soup, add more broth. Thicker soup- add less.
  2. Add rosemary (fresh if you have it), salt and pepper.
  3. Stir, cover, bring soup to a boil. Then simmer until asparagus is soft (but still bright green).
  4. Puree soup using an immersion hand blender or a high- speed blender.
Notes
  1. For extra protein or to make this soup a main dish, sautee prosciutto separately in coconut oil till crispy, crumble and add on top. Serve with your favorite focaccia or baugette and pasture-raised butter. Mmmmm… good.
