Aaaah finally the perfect gluten-free grain-free Paleo blueberry muffin. Just as fluffy and blueberry–muffin–delicious as your regular old muffin, minus the inflammatory grains and undesirable blood sugar spikes. Boasting plenty of protein, fiber and omega 3s and 6s, you might just say this muffin is healthy.
You got it, this muffin is healthy. Never thought I’d hear those words about a muffin.

I love integrating Paleo baked goods into my diet. I see a few major benefits:

  • You can satisfy carb cravings without actually having a carb. How cool is that?
  • Since your baked goods contain protein, they don’t leave you with a blood sugar crash an hour later, reaching for the nearest piece of chocolate.
  • You’re eating real nutrients that should be part of your diet anyways.
  • Oh, did I mention they taste amazing. Yeah that too.

Ingredients
  1. - 2 cups blanched almond meal
  2. - ½ cup flax meal (freshly ground flax seeds)
  3. - 3 eggs
  4. - ½ cup maple syrup (reduce to ¼ cup if you’re strict Paleo)
  5. - ½ tsp baking powder
  6. - ½ tsp salt
  7. - 1 TBS + 1 tsp vanilla extract
  8. - 1 cup blueberries, washed and patted dry
Instructions
  1. Preheat oven to 325 degrees. Grease 12 muffin cups with coconut oil or line with muffin liners.
  2. In a large bowl, mix all ingredients except for blueberries (I use a hand blender). Gently fold in the blueberries making sure they are evenly distributed in that batter.
  3. Spoon the muffin batter into muffin cups and bake for 35 minutes or until the top has turned a rich golden brown. Once cooked, remove from oven and cool for 5 minutes before removing muffins.
